Glo’s Chewy Oatmeal Chocolate Chip and Walnut Cookies
1 cup unsalted butter
1 cup light brown sugar
½ cup raw sugar
Mix in a mixer until smooth
2 eggs added one at a time blended with mixer
2 teaspoons vanilla
Set aside
Mix dry ingredients together in a bowl:
1 1/2 cups unbleached flour plus 2 Tablespoons
½ teaspoon baking soda
1 teaspoon salt
Stir then add to mix. Blend together with a wooden spoon or spatula.
Stir in by hand 2 cups chocolate chips
Stir in by hand 1 cup chopped walnuts
Stir in by hand 3 cups oatmeal
Preheat Oven to 350
Drop by heaping teaspoons onto ungreased cookie pans (about the size of a ping pong ball)
Bake 12 minutes in preheated oven and allow cookies to cool on baking pans for five minutes before transferring to a cooling rack. Don’t overcook–they may look like they need to cook more, but don’t get them overdone. I tap the top of each cookie to flatten it a bit and make them dense. Enjoy!
